Elevate your roast to another level with this beautiful joint.  Usually cut and sold as steaks, the rump muscle makes a more than deserving alternative to the Topside cut typically used for roasting.  The meat is lean and meltingly tender when served pink and is topped off with a layer of fat the boosts the flavour as it cooks.  Dry aged for 30 days minimum.
